I was so excited to try this Nut/cassava free blend as I’ve already tried the other grain free blend to make pancakes and they were amazing!!! I decided to use the nut/cassava free blend to make waffles. I have to say the waffle recipe calls for spices and pumpkin which I wasn’t really sure I’d like. I’m not a big fave of pumpkin spice. However, I didn’t like them, I LOVED THEM!!! They are SO amazing and easy to make! It was not just a waffle but a dessert. I cooked each waffle for about 3-4 minutes and topped it with a little maple syrup. I kid you not, these waffles are amazing and fluffy on the inside!!! It made 8 palmed sized waffles and eating one waffle was filling. So I was able to eat on the waffles for a week! I am counting down the days to make another batch and I will definitely be buying the 2 pound bag of both Beth blends. I can’t wait to try the other recipes with the blends. Try it, you won’t regret it!!!
