Baking Soda vs. Baking Powder

Baking powder and baking soda are similar in that they both help baked goods rise. Baking powder actually contains baking soda among its ingredients. While they are similar they are not interchangeable. Baking soda needs acid to be activated so it can be used in recipes that use buttermilk, lemon juice, cocoa powder, etc. Baking powder only needs liquid to be activated. While baking powder is widely used in baking, it contains cornstarch, so it's not grain free. To eliminate the need for baking powder, Beth Blends uses a combination of baking soda and cream of tartar.
