These Gluten Free Blackberry Scones are best on the day of baking. However, you want to make them ahead of time just, make the dough and then freeze them uncooked. Just defrost before baking.

Ingredients - What do you need to make these blackberry scones?
- Beth Blends Grain Free Flour Blend: This is the flour in the pink bag.
- Coconut Sugar
- Sea Salt
- Gelatin: This acts as a binder.
- Palm Shortening or Lard
- Water
- Vanilla Extract: If you would like to use Vanilla Powder, you’ll need 1/2 teaspoon.
- Fresh Blackberries: Make sure that they are frozen so that they don’t get crushed.
- Lemon: You’ll need the zest and juice
How to make Gluten Free Blackberry Scones from Scratch
1. Preheat the oven to 350 F. Line a baking sheet with parchment paper.
2. In a large bowl, add the grain free flour blend, coconut sugar, salt, and gelatin. Stir to combine.
3. Add the palm shortening into the flour mixture and work it with your spoon (or fingers) until the mixture resembles wet sand.
4. Add the water, vanilla extract, blackberries and the zest and juice of the lemon. Mix until it starts to form a dough. You may have to knead it with your hands to get it to come into a ball.
5. Put the dough it on a floured cutting board or clean surface so that can be cut into. Gently flatten the ball into a circle shape, about 1 inch thick and 7 inches wide. Using a knife cut into six equal wedges and then transfer the wedges to the baking sheet.
6. Bake for 20 minutes. Allow to rest for 10 minutes before serving. If using, make the glaze and drizzle on top.
Tip and tricks for Perfect Scones
- Blackberries must be frozen otherwise they will be mushed when added to the batter.
- If you would like to add a glaze, combine 2 tablespoons Coconut Butter, 2 tablespoon Coconut Milk, 1 tablespoon Maple Syrup or Honey and 1/4 teaspoon Vanilla Extract or 1/8 teaspoon Vanilla Powder into a small bowl. Place the bowl into the microwave for about 15 seconds and stir until combined and smooth.
- To make mini scones, follow steps 1-3 then separate the dough into two balls, flatten and cut them into 12 pieces. Bake them for about 12-15 minutes, depending upon the size.
- If you have a small lemon or it isn’t very juicy then you may need two lemons.
