Since this Matcha Cake is gluten free, it’s made with the Grain Free Flour Blend from Beth Blends along with sugar, salt, matcha powder, oil, vanilla extract, lemon juice, lemon zest, eggs, bananas and coconut milk.

Let’s be clear. This is cake and should be eaten with moderation. However, this recipe uses much healthier ingredients that your typical cake.

Why does matcha turn brown when baked? Why is my matcha cake not green?
Matcha powder does not like heat. When heated like in a cake, it will turn brown. If your matcha cake is green, it’s because a food dye was added.
Can I use drinking matcha for baking? What is the best matcha to use?
Ceremonial grade matcha is very expensive and not necessary for this recipe. Culinary matcha is fine. However, I’ve found that the higher quality matcha powder tends to be brighter green. The color of the green tea doesn’t matter for the cake. It does help make the frosting a brighter green though.
Equipment to Bake Matcha Cake
- Parchment Paper: This is necessary to ensure that the cake doesn’t stick to the pan.
- 8” Round Cake Pan: You’ll need two cake pans for this recipe.
- Electric Hand Mixer: This is optional. This recipe is easily done with just a spoon or spatula. However, this is necessary if making your own frosting.
Matcha Cake Ingredients
- Palm Shortening: Can use butter as a substitute.
- Coconut Sugar: Can use granulated sugar as a substitute.
- Beth Blend Grain Free Flour: Since this is self rising flour, no additional baking powder is necessary.
- Salt
- Matcha powder: Any culinary matcha is fine.
- Coconut Oil
- Vanilla Extract
- Lemon: You’ll need the juice and zest.
- Eggs: You’ll need the egg whites as well as the yolks for this recipe.
- Bananas: You’ll need about 1/2 cup.
- Coconut Milk: Make sure to use full fat coconut milk.
- Vanilla or Cream Cheese Frosting
- Berries or other fruit for decorating
How to make matcha cake
1. Preheat your oven to 350. Grease the sides of two round 8” cake pans with palm shortening. Add parchment paper to the bottom of the cake pans.
2. In a large mixing bowl, combine the coconut sugar, Beth Blends Grain Free Flour, salt, and matcha powder. Then stir to combine.
3. Next add in the coconut oil, vanilla extract, lemon juice, lemon zest, eggs, bananas and coconut milk. Then stir until full combined.
4. Equally divide the batter then pour into the prepared cake pans. Then bake for 25-30 min until a cake tester comes out clean.
5. While the cakes are cooling you can start to make the frosting. Use your favorite vanilla frosting recipe and add 2 teaspoons of matcha powder.
How to Assemble This Matcha Layer Cake
6. Once the cake is cooled, use a cake stand on the bottom of one of the cake pans and quickly flip it to remove it from the pan. Add a layer of frosting to the top of the cake then carefully place the second cake on top. Finish frosting the cake. Then decorate with berries or other fruit.
Tips for Making This Matcha Cake Recipe
- Different types of matcha will have different shades of green.
- Make sure to let the cakes cool before frosting.
- Since the Grain Free Flour Blend from Beth Blends is a self rising flour no additional baking powder is necessary.
- Make sure to use full fat coconut milk. You want to the fat of the heavy cream for this recipe.
